Our preparation begins with carefully selected chicken pieces that are marinated for a minimum of 4 hours (and often overnight) in a mixture of hung yogurt, lemon juice, and a proprietary blend of spices including cumin, coriander, garam masala, and kashmiri red chili for that distinctive red-orange color. The yogurt not only adds flavor but also tenderizes the meat through its natural enzymes. When the chicken is placed in the tandoor at temperatures exceeding 900°F, it develops a beautiful char on the outside while the inside stays succulent and juicy.
